Farmers market- grass fead meats

 We are trying to eat less and less meat these days. But tonight we are going to the Farmers Market with hopes to buy some grass fead ground pork or beef from one of our local farmers. Along with our weeks worth of veggies. If so this is what I will be chef'in up for dinner tonight.

 

Chipotle Pork Cheeseburgers   Serves 4  Active time:10 min  Start to finish:20 min

1 lb ground pork (not lean) 
2 teaspoons minced chipotle in adobo plus 1 teaspoon adobo sauce 
2 garlic cloves, forced through a garlic press 
4 slices Muenster cheese 
4 hamburger buns, toasted 
1 large tomatillo (1/4 lb), husked and rinsed, then sliced 
1/2 small avocado, sliced 
1/2 cup cilantro sprigs

  • Prepare a gas grill for direct-heat cooking over medium heat

  • Gently mix pork, chipotle, garlic, and a scant tsp salt until just combined. Form into 4 (1/2-inch-thick) patties.

  • Oil grill rack, then grill patties, covered, 4 minutes.

  • Flip patties and top with a slice of cheese. Grill, covered, until just cooked through, 1 to 2 minutes more.

  • Spread buns with mayonnaise and assemble burgers with tomatillo, avocado, and cilantro.

The Present Man


as we like to call him at our house arrived minutes ago with this darling wrapped box and inside were fabulous poolside acrylic wine glasses! I am dying, perfect timing for pizza and wine poolside tonight. This is the sweetest gift from my brother in law's girlfriend. She is an interior designer at J Banks Design in HHI. Doesn't it makes you smile from ear to ear when the present man arrives with boxes of things you haven't ordered, especially since my husband is not a huge fan of the present man.

Meatless Monday-asparagus & spring onion pizza

The perfect spring meal.
Asparagus & Spring Onion Pizza
Serves 4
 
          Ingredients 
  • Purchased fresh, raw pizza dough
  • 2 1/2 Tbs. extra-virgin olive oil
  • 2 Tbs. chopped fresh chives
  • 1 Tbs. freshly grated parmesan
  • 2 garlic cloves, crushed
  • Pinch of salt & crushed red pepper flakes
    For the topping:
    • 2 cups (1/2 lb.) fontina cheese, shredded
    • 1/2 cup shredded mozzarella
    • 1/2 cup ricotta
    • 1/2 bunch asparagus
    • 4-5 green onions, thinly sliced
    • Salt and black pepper, to taste
    Directions 
    Preheat oven to 400°F. Roll pizza dough out to a 10 x 15-inch rectangle at 1/4-inch thickness. Transfer to a lightly greased sheet pan.
    Combine next five ingredients together and brush evenly over pizza dough. Spread fontina cheese evenly over top. Stir the mozzarella and ricotta together in a small bowl and place small dollops over pizza. Cut one-inch tips off asparagus and reserve stems for another use. Spread tips over top and sprinkle with green onion. Season with salt and pepper.
    Cook in center rack of oven for 15 minutes or until all cheese is melted and lightly browned. Slice and serve warm.
