Light reading and a little manners mixed in

 I love these books. We are getting ready to travel for a good part of the summer. The books on manners will be great to mix in with their reading list books. It is very important to me to raise my little guys with good manners these look they will be light and fun for the boys. The last book looks like a fun journal they can write, draw and tape fun things
from our trip in as a keepsake.

TOMATOES and Roasted-Tomato Tart

We made it back to the farm to pick tomatoes. 
This time there were no thorns and the tomatoes were beautiful!

This is what I am making with them tonight;

Roasted-Tomato Tart
1 sheet frozen puff pastry (from a 17 1/4-oz package), thawed
2 lb tomatos cut in half
2 tablespoons plus 2 teaspoons extra-virgin olive oil
3 1/2 teaspoons finely chopped fresh thyme
1/2 cup Parmigiano-Reggiano shavings plus additional for garnish

Put oven rack in the middle and lower thrid of oven. Preheat to 400 degrees. Line a large shallow baking pan with foil. Roll out pastry sheet on a lightly floured surface with a lightly floured rolling pin in to an 11-inch square. Using a plate or lid as a guide, cut out a 10-inch round circle. Carefully transfer round to ungreeses baking sheet by rolling pastry around pin and then unrolling onto baking sheet. Chill round on baking sheet until ready to use. Toss tomatoes with 2 teaspoons oil, 2 teaspoons thyme, and salt and paper in a bowl until well coated. Roast tomatoes, cut side up in 1 layer, in foil-lined baking pan in middle of oven, 1 hour. Brush pastry round with 2 teaspoons oil, then sprinkle with 1 teaspoon thyme. After roasting tomatoes 1 hour, move tomatoes in pan to lower third of oven and put pastry on baking sheet on middle rack. Bake pastry and tomatoes until pastry is golden brown and edges of tomatoes are slightly browned but still appear juicy, about 15 minutes. While pastry is still warms, scatter 1/2 cup cheese shavings evenly over it. Top shaving s with warm tomatoes, cut sides down and in 1 layer, then sprinkle evenly with remaining 1/2 teaspoon thyme, salt and paper to taste and additional cheese shavings. 

p.s. I am adding a little garlic to ours and serving with a simple mixed greens and olive oil.

This is our favorite drink around here. We used to order one at SPROUT after work outs but the price tag on this little drink is killing me. I think it goes for $9.00, really I have tried not to pay attention to what she says while I dig in my bag for change. So I made a go for it at home and it was AMAZING. You have to try it. Now I am not much for measuring. I have to admit my kitchen is equipped with one pyrex measuring cup. Which is used for heating things up in the microwave.

4 stalks of celery (mine were on the small side)
1 handful of spinach
squeeze half a lemon
a quick pour of flax seed oil
add about a cup of water and blend until everything is liquid, then add

1.5 frozen bananas
1 handful or a bit more frozen pineapple chunks
about another cup and a half of water...you can add more water if needed. Blend. You want it thin enough to drink or sip.

Remember to try to use organic local produce. Enjoy!

Kids love this too. This is my little guys favorite! He know exactly what is in it, helps me make it and critiques me on the finished product. "This is licious mommy!"

Black Berries and a little thorn

We had so much fun hunting for the perfect blackberries.

It was a little confusing why the pretty red ones needed to be left behind. 
Then the attack of the thorns or as O would say the 'forns got me! Followed by screaming and crying hold me mommy the 'Frons' are everywhere!
He did get a huge thorn is is hand. 
Poor guy. My fun little outing ended soon after that.

 We will be back in a few weeks to pick these tomatos.Yummy!

Then we made a quick stop for a piggie lunch. I didn't take a pic of the food. Trying to forget that I ate it. A huge stray from my no meat, unprocessed,  organic diet! Sure was good. Sweat potato mustard. LOVE. Blue cheese slaw...all on your dog...plain YUM.

If you are local go down to the U-pick gardens at Boone Hall. 
These are the biggest black berries I have ever seen. Not to mention delicious! 
Tomatos and blueberries will be ready in less then two weeks.

Floating the day away...

When I came across this image I was instantly taken back to my Grandparents cabin in Northern Minnesota. Yes, the middle of no where. Simple yet beautiful. Most of my days were wasted floating around on a dock, much like the one in the photo...minus the bed and lamp. But believe me if I could have carried a mattress, bedding and the lamp out through shoulder deep water I would have. My little heaven, floating the day away reading Teen and Seventeen magazines the same issues over and over...since I was not aloud to have them, but did thanks to my sweet Daddy I did.
